Blue Apron Meals, Box 1.
I decided to try a meal delivery service called Blue Apron. My first box contained the ingredients and instructions to make the following 3 meals:
Meal 1: Red Curry & Coconut Shrimp Stir-Fry.

Favorite part: Learned to cook collards other than southern style and first time using pea shoots.
Lesson learned: “Prep first” was more than a mere suggestion, lol. I burned the scallions. But loved the coconut milk and it was pretty good!
I got 4 servings out of this.
Meal 2: Seared Chicken & Verjus Pan Sauce.

Favorite part: Chicken thighs already deboned!
Lesson learned: Not crazy about kale but liked the Verjus Blanc and Creme Fraiche, both which I’ve never cooked with before.
4 servings but probably should have done 3.
Meal 3: Soy-Glazed Meatballs.

This one was my favorite!
Favorite thing: First time cooking jasmine rice and also cooking with a chunk of fresh ginger, radishes marinated in rice wine vinegar was really nice on top, and I think it tasted pretty dang good all together.
